Jean-Georges has led a stellar career in Michelin starred kitchens, opening restaurants from Chicago to Tokyo, writing seminal cookery books and presenting shows. His distinctive cuisine has an exotic accent; intense vegetable juices, fruit essences, light broths and herbal vinaigrettes are infused with aromatic flavours of the east.

Jean-Georges is involved in every aspect of each project – concept, menu, design and staff, creating restaurants that are contemporary and enduring. He was born in Alsace but inspired by his travels, and at Eden Rock-St Barths he adores his spectacular stage by the sea, a suitably fresh setting for his zesty exotic cuisine.

Eric Desbordes

Eric Desbordes discovered his passion and vocation at the tender age of 13. After carrying out his apprenticeship at the Hôtel George-V and at Joël Robuchon’s Studio. His career took off on a rapid trajectory, until within one year of opening at 114 Faubourg under the guidance of Eric Frechon, he earned his first Michelin star.

A loyal clientele from the highest echelons in Paris have inspired Desbordes to heights of excellence and his youthful creativity knows no bounds. It is with great delight Eden Rock - St Barths welcomes him to demonstrate his flair to guests who travel the world in search of the finest pleasures in life.
